Very dumb question

Is there an easy way to determine orbits of planets around stars?

I have looked at the stargen utility, and while it sets up nice systems, i am unsure how to take the data and put it into celestia as orbits.

Stargen generates Celestia catlogs itself if you include the "-c" qualifier.

If you've cd'd to the directory where stargen is located, the following command will create a planetary system around the star TAU Cet

StarGen.exe -W5 -s48 -g -c >taucet.ssc

">taucet.ssc" tells Stargen to write its SSC catalog output to the specified file. Otherwise it'll type it to the terminal window.
