And I was wondering: What would it take to insert these models into Celestia? TIA.

It is possible, mir is in there too .. though i do not know how.

To the models: OpenUniverse had a very nice Station V model from space oddysey in there, es well as the vessel with Hal9000 ;)

plaese take a look how the MIR went into Celestia. If you got the Discovery of 2001 in 3DS format (the mostly used format) then you'll be able to put it in.

I don't know which file and directory contains the model file (\models prob. LOL) and config file (\conf ?) but you'll easy find them if you search for them with Explorer).

For a start simply change the MIR entry to Discovery then you're done. You can then simply change the config file after your ideas...
