I going to project Cellestia into the Church Hall so my Cub Scouts can achieve their Astronmy Badge, but Ideally I'd like a set of premade navigations / favorties to the Constellations, Planets, Moons, etc.
Does such a pre-made list exist? for Orion, Andromedia, etc, so we can fly round the galaxy and visit each of these key locations?

The Windows Navigation/Tour menu item is defined by the contents of the file Celestia/tour.cel.
Despite its filetype extension, tour.cel is not a .cel script. It's a plain text file with its own, relatively simple, format.
It probably would be appropriate to edit it to include more of the things that are mentioned in the merit badge requirements. If you do that, please post it here and/or upload it to the MotherLode. I suspect there are others who would be delighted to make use of it!
There also are several scripts available on the Celestia MotherLode which might be helpful. See

Unfortunately, the tour menu isn't in the Mac version. Scripts work fine, though.
I'm not sure what you mean by "plot the coordinates for the constellation." Celestia doesn't provide a way to select and center a constellation, but you can do that with one of its member stars. There is a CELX script which will display the RA and Dec as well as the azimuth and elevation of the center of the window -- where the viewpoint is looking. It's available on the Motherlode, too.
p.s. You also can type any text you want on the screen from a CEL script. While it wouldn't be dynamically showing the coordinates, you could type the coordinates that the script is supposed to be pointing toward.
