This is the first I've heard of that kind of a problem with your kind of hardware and software configuration, but you don't say which operating system you're running. Vista? XP? 2000? '98?
Are you loading any Addons?
Are other programs running at the same time?
What does the task manager show the memory usage doing before it locks up?
What is the disk activity like?
(I'm wondering if it's "paging itself to death")

I have win xp pro sp2. my celestia 1.3.2 and 1.4.1 with or without addons have same problem. other programs aren't running at the same time.
15 days before update new motherboard (asus) and new cpu (pentium d 820), the celestia was running without any problems in cpu of p4 3.06ghz northwood and in motherboard of dfi via p4x400-al.

Then I'm sorry to say that this suggests an AGP or motherboard problem. I seem to recall that there have been some issues related to getting the AGP bus mapping set correctly in the BIOS, although the problem is not unique to Celestia.
Just to be certain:
What capacity is the power supply in your system?
(It should be 500 Watts or more: lower rated supplies can't supply the current that the graphics card requires, even if the whole system uses much less than 500W.
The 6800Ultra requires 130W and the P4D 820 requires close to 100, plus memory and disks, that adds up quickly.)
Do you have the second power connector connected on the graphics card?
(It can't get enough current through the motherboard slot and thus can't work without the second connection.)

Using 6000 series cards in 3D mode more than doubles their power usage compared to 2D mode, so you might not see a problem normally. Also, Celestia is much more demanding than most 3D games.

What does the 6800's temperature monitor say in the Nvidia ForceWare graphics driver?
What does the CPU temperature monitor say?
What about the temperature of the "northbridge" chip?
(If any of them overheat, they'll shut down the system.)

sorry, I forgot to have my psu with 550w and have directx 9.0c August.
the temperature of air in my home is 23?? C.
full load - temperatures:
gpu: 75 - normal
cpu: 60 - normal?
motherboard: 40 - normal
power: 50 - nromal?
it's possible only the my new motherboard is guilt by freeze problem?!!
but the games "nfs most wanted", "Race Driver 3"... haven't any problems in new motherboard and in new cpu!
Did you install DirectX9c *after* you installed the Nvidia driver?
If so, then you must reinstall the Nvidia driver. DirectX9c overwrites Nvidia's driver with Microsoft's driver, which has problems.
While you're at it, you probably should download and install the most recent Nvidia driver, v91.47.
Be sure to de-install the previous driver and reboot before you install the new one.
(Be sure to do it from a separate privileged account. Of course, you should be using a non-privileged account most of the time. Also, Nvidia's installation procedure resets the screen resolution to something very low as part of the installation, which will mess up the layout of your on-screen icons if you have any. Use that other account to set the resolution back to what you normally use. Changing the resolutions while in a different account won't affect your normal account's screen layout.)
