another newbie Q (sigh)

I was trying to follow the instructions in Q19 of the FAQ to see the sky as it would appear from Earth. However, as soon as I pressed Go to Surface, the stars disappeared! And they didn't reappear when I pressed alt-azimuth mode. And I don't think it was just that there were none in that part of the sky, because I tried scrolling around for a bit and couldn't find any.

Oh, and one more question; is it possible to make a view of the entire sky appear on the screen rather than having to scroll?

Please ALWAYS state your operating system! The particular point is that those key operations you are referring to are assigned DIFFERENTLY in Windows and Linux!

Celestia is offerred for Windows, Linux and MAC OS.

You might have been looking down at Earth. Try locating something that you know is in your sky at all times like Polaris in the Northern hemisphere. By hitting Enter and typing Polaris, then C to center it. You can use . to widen your FOV.
