A couple of questions regarding accuracy.

According to some brief research, I've learned the Betelgeuse (ALF Ori) is about one thousand times as massive as Sol, and Mira (OMI Cet) is about the same size, if not larger. However, Celestia does not reflect this. How can stars.dat be edited for accuracy, and what's the largest acceptable star Celestia can properly handle?

That?s wrong ! Diameter and mass are not the same. Correct is, that Betelgeuse is ca. 600x larger in diameter than sol. The mass is ca. 12x sol.
