Each extrasDir specified via -extrasDirs should behave just like the default Celestia "extras" folder (so folders within folders should work--but honestly haven't tried that yet). To be safe, specify absolute paths. Steve's unofficial builds should include the relevant functionality if you'd like to try it out.
Double-clickable shell scripts are doable using the fake .app trick (2nd comment down).
