...has a bunch of liquid material on it (carbons, methane, whatever) what happens if the Huygens probe has the unfortunate luck to take a dunk?

It's designed to float! In fact, the percentage of the part under liquid, and above liquid will tell scientists the density of the liquid it is floating in, which will tell them what it is floating in. Just like an ice cube is mostly under water, but the top is above water. The ratio gives it away that water is the liquid the ice cube is floating in.
