Are there any Windows based programs to add my own stars to Celestia?

I'm not sure exactly what you mean, but some time ago, Rassilon wrote a program to create globular clusters with random planetary systems. See http://www.shatters.net/~rassilon/

Stars can be defined in plain text catalog files that have the filetype STC.
(STC = STar Catalog)
