First of all, all of the TNOs currently in Project TNO aren't "potato-shaped" - they are either spheroids, or ellipsoids. Some moons are "potato-shaped" though.
Second, textures aren't the same thing as models/in-game renders - they are components of the rendering, and without then, everything in the addon would be a white featureless spheroid/ellipsoid.
