(Help) Fantasy textures? (Final Fantsy, middle earth, etc)

I'm a big fan of fantasy cartography and have many maps that I have extracted from video games. I would very much like to clean them up and import them into Celestia, but need some assitance.
I have maps for Final Fantasy 1-10, various Ultimas, Phantasy Star maps some incomplete middle earths, some incomplete "Grey Wolf", Dareth from "Asheron's Call", and others. Here are the issues I have
1) I'm exclusivly a linux user. No windows utilities.
2) I need to make many of these maps look much more realistic and up the resolution, what utilities can I use
3) Worlds like "Middle earth" are incomplete, what should I put in the blank spots?
4) Many games like the "Final Fantasy" and "Phantasy Star" series use a toroid-shaped "planet" with a square surface aria. Besides making the landmass smaller, how can I deal with the "Pinch" that happens at the poles?
5) Has anyone tried this before? Links anyone?
