I have an idea I want to try out with Celestia's default Earth texture, however I don't know how to get started.
My issue is, how do I remove the white/transparency thingy from the texture using Gimp so I can see the land masses?

The default texture is a 32bit png file, which includes an Alpha channel that Celestia uses for the specularity.
After you load the texture file into any paint program, one of the output options should be to save it as a 24bit png file. That format would not include the Alpha channel. Alternatively, you could save it as a JPEG, although that would cause some loss of resolution.
