I have heard people on here talking about viewing planets and satalites from cassini

is there a cassini model and data, anywhere
I have some xyz coordinates.

Yes, but not in a form that looks good in Celestia. Someone with some 3d modelling experience is going to have to work the models over first, I'm afraid.
