Every time I restart Celestia the preferences are reset to the default minimum and there is no way to save the e.g. low resolution graphics when i want high res

Is the any way to resolve this

As you've observed, the current MacOS X version of Celestia doesn't save all the settings. This problem should be fixed in the next release.
