A user Antdoghalo on the Unmanned Spaceflight forum created a 32K map texture for Ceres a few days ago (here). I have turned it into a Virtual Texture for use in Celestia. Simply extract the .rar file into your extras folder, as I have already added the .ssc and .ctx files to make it all work.
