I am new to Celestia and I was wondering if it was possible to add a solar system around pre-existing stars in the program. Like, if I wanted to add a couple planets orbitng Delta Pavonis, how do I do this?

Yes, yes you can.
In the case of Delta Pavonis, as an example, you would simply create, under your "Extras" folder, another folder called "Delta Pavonis". You owuld then create an SSC file named "Delta Pavonis.ssc", and add in the parameters for your planet.
For an in-depth explanation, I suggest going to the Motherlodeand downloading one of their tutorials for SSC file creation. They are quite helpful.
