I would like to remove the drop down menu bar at the top of the Celestia screen. I need this to prevent users from exiting or monkeying with the settings.

Since you did not specify your OS, I tell you the answer:

CTRL+M

of course this works only in Celestia - KDE (Linux).

In case you are not aware: Celestia is a multi-platform application. So in case you have further questions, please specify your OS, graphics card and all that...

Celestia is designed so the user can modify many options using the keyboard. Eliminating the menu-bar won't be enough. You'll need to edit the source code and build your own version.
