To clarify what ElPelado said:
Celestia requires that all maps have 0 degrees of longitude in the center, with 180 degrees of longitude at the edges. Many maps of Mars have 0 degrees of longitude at the left and right edges, with 180 degrees of longitude in the center, including maps on Fridger's "Texture Foundry".
Using a map with 0 at the edge would cause the symptoms you describe.
I'll add this to the "Preliminary User's FAQ"

I was just going to post about this.
Since it's quite important in some cases, I wonder what the options are? Any ways to fix these textures? Or are their other high res textures than those on his site? It's the only ones I've found for Celestia, but I admit I'm a bit new.

Jugulator,
Surface textures are just pictures.
The fix is to use your favorite paint program to cut the map in half and exchange the halves. This changes what was the center into an edge.
A free DDS Photoshop plugin is available from Nvidia for imorting and exporting DDS textures, if that's necessary.
Precise control of where the cut happens is available if you use a NetPBM or ImageMagick picture manipulation program.
